According to recent research published in the Journal of Food Science, "F-polylysine is a homopolymer of L-lysine, an essential amino acid, with a reportedly wide antimicrobial spectrum."
I. Geornaras and colleagues of Colorado State University wrote, "This study evaluated the antimicrobial activity of epsilon-polylysine, as compared with known preservatives and organic acids, against Escherichia coli O157:H7, Salmonella tyrphimurium, and Listeria monocytogenes, in culture broth.
