Flour Commonly Contaminated with a Major Cockroach Allergen

Findings from a study demonstrate cockroach allergen in store-purchased flour packages is prevalent and could trigger baker's asthma, a common occupational health hazard for some people.

In allergic individuals, certain allergens, or triggers, can aggravate asthma episodes. Previous studies have documented cases of anaphylaxis that occurred after ingesting baked goods made with flour contaminated with Tenbrio molitors, a microscopic beetle found in flour, or with mites.
