Christine L. Williams and colleagues at Columbia University in New York studied the effects of Healthy Start on children two to five years of age in nine Head Start centers in upstate New York. The main goals of the program were to reduce saturated fat (sat-fat) in meals to less than 10% daily energy (E) and to reduce the preschoolers' intake of sat-fat to less than 10%E.
