Microbiological Testing Would Shore Up Restaurant Inspections

H. Kassa and associates compared the findings from microbiological testing of swab samples to scores from visual inspections in 70 high-risk food service operations in Toledo, Ohio. Their results were published in the Journal of Food Protection.
