Studies from National Dairy Research Institute Reveal New Findings on Antioxidants

2012 FEB 27 -- "In the present study, heat denatured whey proteins (HDWP) with 57.14 +/- 2.81 % protein contents were hydrolyzed with commercial enzyme flavourzyme using optimized conditions. They whey protein hydrolysates (WPHs) were investigated for antioxidant activated by ABTS (2,2' azino-bis-(3-ethyl benzothiazoline)-6-sulfonic acid) radical sequestering assay and by measuring the changes in the activities of different antioxidative enzymes by oral administraton of WPHs to the mice as animal model," scientists in Haryana, India report.
