Acidified sodium chlorite effective for preventing salmon contamination

Acidified sodium chlorite is an effective means of preventing salmon contamination.

In a study from the United States, the antimicrobial activity of ASC "against Listeria monocytogenes in salmon" was evaluated.

"Raw salmon (whole fish and fillets) inoculated with L. monocytogenes (103 CFU/cm2 or 104 CFU/g) were washed with ASC solution (50 ppm) for one minute and stored at -18 degrees C for one month (whole salmon) or in ice for seven days (fillets)," according to Y.C.
